Peanut Butter Cookies


The best cookies!!!

1. Butter or hard margarine-------1/2 cup 125 mL
Softened at room temperature
Brown sugar packed------------2/3 cup 150 mL
Granulated sugar---------------1/3 cup 75 mL
Large egg-----------------------1 1
Smooth peanut butter----------1/2 cup 125 mL
Vanilla flavoring----------------1 tsp 5 mL

2. All-purpose flour--------------1 1/2 cups 375 mL
Baking soda-------------------1 tsp 5 mL
salt---------------------------1/8 tsp 0.5 mL

3. Candy coated chocolate bits,
such as smarties or M&M's

You will need: cookie sheets,a medium size bowl,measuring spoons, measuring cups, and electric mixer, a rubber spatula, a mixing spoon, a table fork, oven mitts, a wire rack, a pancake lifter and wax paper.
1. Turn the oven on the 350°F (175°C). Grease the cookie sheets. Combine the first six ingredients in the bowl. Beat on low until everything is moistened. Beat on medium speed until smooth. Scrape the batter of the beaters into the bowl using the rubber spatula.
2. Add the flour, baking soda and salt. Stir with the spoon to moisten. Using the palm of you hands, roll the dough into 1 1/2 inch ( 3.5 cm) balls. Arrange the balls on the cookie sheets, about 2 inches (5 cm) apart. Press down with a fork or with your hand or a bottom of a glass. If sticky, dip the glass into some flour between presses.
3. Bake on the center rack in the oven for 10 to 12 minutes. Use the oven mitts to remove the cookie sheets to the wire rack. Let stand two minutes. Remove the cookie to the waxed paper on the counter. cool completely. Store the cookies in a container with a lid. makes around 24 to 30 cookies.
